Heart Healthy & Yummy!

February is American Heart Month and we are celebrating with FOOD!  And yes there are lots of tasty heart healthy options out there.  We are highlighting four options for you to cook-up and try this month for a tasty breakfast, lunch, dinner, and dessert.  Each meal has ingredients that are good for your heart and are easy to make!  We hope you will give them a try…your tummy and heart will thank you!

First, it’s important to start the day off right with a good breakfast for your ticker.  Try out this great option from The Kitchn website for Olive Oil Carrot Muffins!  This recipe is full of goodness for your heart. It has oats packed with fiber to reduce bad cholesterol; carrots filled with vitamin A and antioxidants; and uses applesauce and light olive oil as a healthier baking substitute to butter.  Make up a batch on the weekend to enjoy for easy breakfasts on the go!

Second, try this heart healthy Mason Jar Taco Salad with Avocado-Cilantro Dressing that is perfect to pack for work lunches and who doesn’t love taco salad?  Using a mason jar helps keep your meal proportions in check and you can make 4 days’ worth of lunches at one time. The recipe is also full of flavor and fiber with a good mix of veggies and beans that your heart will love. For dinner, it’s time for some fish that’s packed with healthy omega-3 fatty acids great for anti-clotting effects to keep your blood flowing.  Try this super easy weeknight dinner recipe for Sweet & Tangy Salmon with Green Beans from one of my favorite site’s Taste of Home.  The recipe has a delicious barbecue style sauce and couldn’t be easier with a sheet pan to bake your fish and side green beans at the same time!  There are lots of great fish recipes out there that are good to include for a heart healthy diet, but it’s important to select non-fried options without heavy sauces for a better choice.

Lastly, you can still enjoy a treat & be good to your heart!  Valentine’s Day is coming up, so how about sharing this yummy and healthy Spiced Chocolate Mousse with Maple-Whipped Topping & Candied Pecans with your sweetheart!
